Lemon-Caramel Icebox Cake Recipe



Gaylene's Review:  Love the lemon curd and easy to make.  Would probably use purchased caramel sauce next time.  (I burned two batches of caramel.  It turns dark quickly once brown.)  Also, Cool Whip would make it lighter than using whipped cream.  Cool Whip could also be used on top instead of the meringue, if preferred.

Served with fresh strawberries for a summery flavor.
